Director of The Sharma Company Marketing Services and Label Co-Owner at Eclectic Avenue Records (E.A.R), Leena Sharma loves living in Ibiza for many reasons – the breathtaking beaches, the tranquility of the countryside and the simply stunning all-year-round weather are major factors, but also the overwhelming sense of community and the fact that there’s music just everywhere!

Leena’s recipe is the Indian staple of Kitcheree. As a practicing Hindu, she fasts every Tuesday for religious reasons. This recipe is cooked every week in her Ibizan kitchen and often serves as an antidote post-DC10 summer madness with friends! A true meeting of east and west.

We added items we found in our fridge – onion, cauliflower and mushrooms. Leena wouldn’t use onions during her fast, but you can use whatever you fancy!

Ingredients

Step 1

Heat some oil and add in the mung daal beans and rice. Cook for 30 seconds before adding 5 cups of water. Bring to the boil add the turmeric, salt and ginger.

Step 2

Chop up choice vegetables about 100g per person. Leena chose cauliflower, butternut squash and courgette. Add the vegetables to simmering rice for 30 minutes. Add spinach for added green and chilli if you like heat. Cook until the rice and vegetables are cooked through.

Step 3

Serve with a nob of butter and a sprinkling of chilli.
