Salomé/Sally Riera Translator Spanish Teacher Stuffed Aubergines

Salome (Or Sally as most people know her) is our first Ibizenco resident recipe. Sally was born and raised in Ibiza with an English mother and Ibizenco father. She is now a Spanish teacher, writer and translator for Ushuaïa Magazine and White Ibiza. She teaches Spanish either from her office at home or from the Ibiza Music Factory offices…

This recipe has been passed down from generation to generation in her family. It brings Sally wonderful memories of summer lunches at home with her parents and sisters. Her dad has a vegetable patch and grows the most tasteful and beautiful vegetables. In summer he grows so many aubergines that the family use them for a plethora of dishes. However, this is her absolute favourite.

Ingredients

Step 1

Cut the aubergines in half lengthways and sprinkle a bit of salt over the flesh. Leave to sweat for around an hour. Rinse and dry. Bring a large pan of water to the boil and cook aubergines for around 15-20 minutes until the flesh is soft and you can scoop it from the skin, creating a shell.

Step 2

Meanwhile, fry onions, peppers and garlic until soft in a frying pan with the two tablespoons of olive oil. When soft add the beef (if using) followed by the chopped tomatoes. Cook for about 20 minutes. Add the flesh of the aubergines (and cooked quinoa if going for the vegetarian version) and then stuff the aubergines with the mixture.

Step 3

Heat the oven to 200ºC. Sprinkle the aubergines with grated parmesan cheese and bake for around 20 minutes or until the flesh of the aubergines looks crispy.

Step 4

Serve hot with a salad of fresh lettuce leaves and avocado and dressed with a dash of lemon juice and olive oil. Enjoy!

Sally  works mainly as a translator for some of the best Ibiza publications including Palladium Magazine, Ushuaïa Magazine – for which  she also writes the agenda back pages – DJ Mag Ibiza and Natalie Chaponnel at White Ibiza. In winter season, when she has more time, she teaches Spanish either from her office at home or from the Ibiza Music Factory offices.
